I bought my leveler in 2000 to use on birthday cakes a couple of times a year . I usually put my layers in the freezer for an hour or two ( firm but not solid ), then use my leveler to make 4 layers out of 2 or to just level out the 2 layers . I have learned to use a sawing motion ( back & forth )especially if you don't freeze the layers first or you will tear your cake to pieces . Take your time , use gentle pressure and let the cable do the cutting . Another reason I freeze my layers is , it's easier to put your frosting on them . I use to work for a bakery / deli and thats how we did them . You can first coat your layers , wrap with platic wrap , then put back in the freezer for a couple of months and still taste like fresh baked when second coated and then thawed .
